Tasty Beans & Rice
Ingredients:
- 1 c. uncooked brown rice
- 1 can (15 oz) black beans, drained & rinsed (reserve some liquid)
- 1 can (15 oz.) pinto beans, drained & rinsed (reserve some liquid)
- Olive oil
- 1-2 cans petite diced tomatoes, any flavor (depending how ‘tomatoey’ you like it)
- Spices to taste: chili powder, cumin, garlic powder, salt
Instructions:
- Cook rice according to package instructions (leftover rice is fine, too!)
- In a large saucepan, heat rice, beans and tomatoes on medium-low heat
- Stir in a drizzle of olive oil and seasonings to taste
Makes: about 4 cups
This makes a great base for: burrito filling, a hearty salad with avocado, tortilla soup, anything! A splash of soy sauce dresses up leftovers nicely. Be creative and enjoy.
