Broccoli Salad w/ Dried Cherries

Ingredients:

  • 1 bunch of broccoli, washed and cut into bite-sized florets
  • ¼ red onion, finely diced
  • Generous ½ c. chopped pecans
  • 1 c. dried cherries or Craisins
  • ½ c. canola or olive oil mayonnaise (preferably organic)
  • ½ c. soy or regular yogurt (preferably organic)
  • 1 T.* sugar or alternative sweetener (Agave nectar** works well)
  • 1 T.* cider vinegar (or any variety)
  • ½ t. ground cinnamon

 

Instructions:

  1. Combine first four ingredients in a large mixing bowl.
  2. Whisk remaining ingredients until smooth in a small bowl.  Pour over broccoli mixture, toss gently and serve.  Do not dress broccoli until right before serving.  This dish will only last about a day in the frig, both because the mayo separates and because it’s so delicious!

 

This is a wonderful potluck recipe.  The combination of cinnamon and broccoli may seem unusual but is absolutely delicious. It’s a wonderful, healthy overhaul of the traditional broccoli salad.

Serves 8

*Use extra vinegar and sweetener to stretch mayo/yogurt mixture for a bigger bunch of broccoli.

**Agave nectar is found at Meijer (specialty baking section) and at health food stores.  It looks similar to honey but is a complex sugar, very low on the glycemic index and safe for diabetics.
