Tasty Beans & Rice

Ingredients:

Instructions:

  1. Cook rice according to package instructions (leftover rice is fine, too!)
  2. In a large saucepan, heat rice, beans and tomatoes on medium-low heat
  3. Stir in a drizzle of olive oil and seasonings to taste

Makes:  about 4 cups

This makes a great base for: burrito filling, a hearty salad with avocado, tortilla soup, anything!  A splash of soy sauce dresses up leftovers nicely.  Be creative and enjoy.
