Breakfast Muffins
Ingredients
1 ½ cups 100% Stone Ground Whole Grain Spelt Flour
¾ cup Oat Bran (all Natural Hot Cereal)
¾ cup Organic Golden Flaxseed Meal
1 cup brown sugar
2 tsp. baking soda
1 tsp. baking powder
½ tsp. sea salt
2 tsp. cinnamon
1 tsp vanilla
2 beaten eggs
1 ½ cups finely shredded or finely chopped carrots
2 unpeeled finely chopped apples
2 bananas finely chopped
½ cup raisins
¼ cup sweetened dried cranberries
½ cup chopped almonds
¾ cup almond milk (or lowfat milk)
Directions
1. Mix all dry ingredients
2. In a separate bowl, mix all wet ingredients.
3. Mix wet and dry ingredients together. Stir until ingredients are moistened. Do not over mix.
4. Pour into muffin pans. Bake at 350 for 18-20 minutes
